The restaurant that put San José fine dining on the Michelin map is seeking a new owner: Bistrónomo is up for transfer

Some bars and restaurants in Zaragoza do not need to be in the city center to win over the most discerning palates. Bistrónomo, a restaurant in the San José neighborhood, has earned four consecutive Michelin Guide recommendations and, after eight years of serving its distinctive author-driven cuisine, has announced it is seeking a new owner.
The restaurant that put San José fine dining on the Michelin map is seeking a new owner: Bistrónomo is up for transfer

This was announced by the Association of Cafés and Bars of Zaragoza and Province, which published the listing for the transfer of the establishment located at 19 Previsión Social Street. The premises are ready to continue operating as a hospitality business and have a bar-cafeteria license, an authorized capacity of 36 people and musical ambiance. Its permitted opening hours run from 6:00 a.m. to 1:30 a.m., with an additional hour on Fridays, Saturdays and the eve of public holidays. Those interested in taking over the business can request more information by calling 608 543 463.

However, the announcement does not mean an immediate farewell. Bistrónomo continues to open its doors and welcome diners while its current owner, Zaragoza chef Guillermo Blesa, looks for someone willing to take over. In the meantime, its kitchen continues to offer the combination of tradition and creativity that has defined its journey, with tapas, sharing plates, dishes inspired by local and international cuisine, and tasting menus. It also offers its autumn menu, priced at 30 euros from Wednesday to Friday and 34 euros at the weekend, featuring dishes ranging from tempura cauliflower and gnocchi with tender garlic to monkfish marinara and beef cheek.

BISTRÓNOMO, A MICHELIN-RECOGNIZED FINE-DINING RESTAURANT IN THE NEIGHBORHOOD

Bistrónomo's story began in 2018, when Guillermo Blesa decided to bring his own vision of gastronomy to Zaragoza's San José neighborhood. His idea was to show that fine dining could also find a place away from the city's major restaurants and busiest areas. To achieve this, he embraced a concept inspired by French bistros while remaining open to new culinary techniques, international flavors and locally sourced products. The establishment itself sums up this philosophy in three words: "neighborhood fine dining."

Over the years, that approach gained recognition until it caught the attention of the Michelin Guide, which has given the restaurant four consecutive recommendations since 2023. The latest came last March, adding a new plaque to those already displayed at the establishment. In its assessment, the prestigious guide highlights contemporary cuisine featuring Asian fusions, vegetables, offal and seasonal menus. The recognition has helped put this small San José restaurant on Zaragoza's gastronomic map.
