The change goes far beyond a new address. The Carcas brothers are unveiling a new space, kitchen, image and culinary concept that preserves some of Casa Pedro’s most recognizable dishes while introducing new creations and formats. The philosophy remains the same: contemporary cuisine rooted in Aragonese tradition, with the product at the forefront and a commitment to reinterpreting familiar recipes using modern techniques.

A NEW HOME FOR THE CARCAS BROTHERS

After nearly two decades on Calle Cadena, Luis and Javier Carcas now face the challenge of building a restaurant designed for them from the outset. The new location occupies a single floor and has been conceived to offer customers a more complete experience, with different spaces and a gastrobar area where guests can enjoy tapas and portions or have an aperitif before moving on to the dining room.

The establishment’s design is also part of this new identity. The project was developed alongside Novo studio, led by Ana Bendicho, and involved Aragonese artisans. Wood crafted by cabinetmakers from Borja, wicker and alabaster plaster elements aim to create a space connected to nature and the region.

The move therefore means leaving behind a venue that was part of Zaragoza’s gastronomic life for years and opening a space of their own. However, the Casa Pedro name remains integrated into the new title as a tribute to everything experienced over the past two decades. The restaurant explains that this evolution is not intended to erase its past, but to continue a story that began in 2006.

CASA PEDRO’S CANNELLONI STAYS

One of the main links to the former restaurant will be found on the menu. The dishes that remain include Casa Pedro’s famous cannelloni, one of the classics that formed part of the restaurant’s identity for years. They are joined by a revamped menu that expands the Carcas brothers’ culinary offering.

The new chapter also introduces tasting menus, longer options and dishes with a stronger focus on vegetables. The aim is to offer different ways to experience the Carcas brothers’ cuisine, from à la carte dishes to a more extensive gastronomic experience based on small bites and seasonal produce.

In this way, the cuisine maintains the balance between tradition and avant-garde that defines the restaurant. The Carcas brothers champion honest, healthy and sustainable food, with particular attention to seasonal and locally sourced produce. This philosophy is complemented by a wine list designed to accompany the different creations.

FROM CASA PEDRO TO CARCAS CASA PEDRO

The new name puts the brothers’ surname at the forefront of a project that until now had been closely linked to the Casa Pedro brand. Luis and Javier Carcas began their joint career two decades ago and have extensive experience in the kitchen. Luis has worked at restaurants including Martín Berasategui, while Javier has also trained in pastry and baking, as well as in Aragonese kitchens such as Lillas Pastia and Las Torres.

Their career is also backed by numerous awards in national culinary competitions. These include first prize at the 2019 National Gastronomy Competition and the title of Spain’s Best Tapa at the 2018 National Pinchos and Tapas Competition in Valladolid.

Now, all that experience is moving to San Miguel with a forward-looking concept. Carcas Casa Pedro officially opens this Thursday, September 3, bringing back one of Zaragoza’s best-known gastronomic brands, albeit with an image and offering adapted to its owners’ new chapter.

CARCAS CASA PEDRO: ADDRESS AND OPENING HOURS

The restaurant is located at Calle San Miguel, 42, 50001 Zaragoza. Its opening hours are Mondays and Tuesdays from 1:00 p.m. to 3:30 p.m.; Wednesdays to Saturdays from 1:00 p.m. to 3:30 p.m. and from 8:00 p.m. to 11:00 p.m. It is closed on Sundays.
