They decided to open the restaurant for a very simple reason: “We preferred working for ourselves rather than working for someone else,” admits Miguel, who is also in charge of the kitchen. That is how the adventure of running their own restaurant began. The venue’s name also has its own story. “After giving it a lot of thought and considering many ideas, we came up with this name, which refers in part to people who like good, refined, luxurious things…,” Miguel explains.
QUALITY INGREDIENTS AND DISHES THAT COMBINE INNOVATION WITH TRADITION
“We have always believed in a cuisine that respects the ingredients. What we offer are fairly traditional dishes,” Miguel explains. However, at Los Sibaritas they aim to add their own touch and perspective to every creation. “We do give some dishes a slight twist; we try to give them something different and take a little more care with the presentation,” he adds.

“We wanted to offer cuisine based on quality ingredients. It is not luxury cooking, but it is designed for people who enjoy the finer things, for gourmets,” Miguel explains, alluding to the restaurant’s name. The more carefully considered plating and the small personal touches they add to their creations are precisely some of the elements that set Los Sibaritas apart from other restaurants.
FROM PATATAS BRAVAS TO CHEESECAKE: THE MENU CLASSICS THAT ARE HERE TO STAY
“Several dishes have become the best known and most requested over the years,” Miguel admits. Among them are their patatas bravas, a classic of Spanish cuisine that has earned a place among their customers’ favourites, and the roasted aubergine salad.

They also offer more creative, signature dishes, such as their mushroom ravioli, made with wonton pastry, truffle sauce and a Parmesan cloud. Desserts are another major draw on the menu and have become true must-tries. The best known include the cheesecake, lemon pie and torrijas.
A CUISINE WITH SOMETHING FOR EVERY TASTE
Miguel describes his offering as a cuisine where “there is room for everyone”. This idea is reflected in a varied menu that brings traditional dishes such as croquettes together with options including grilled squid, queen scallops and steak tartare.

Looking ahead, Miguel and María are clear that their goal is to continue along the same lines: preserving the essence of Los Sibaritas, continuing to champion quality ingredients and offering approachable, carefully crafted cuisine with its own personality. All without losing what has enabled them to establish a place in Zaragoza’s food scene.
