Zaragoza travels back to the 18th century to discover Juan Altamiras’ cuisine: free tastings available

The Fernando el Católico Institution of the Provincial Council of Zaragoza has published a book about Zaragoza’s former San Diego College and its connection to chef Juan Altamiras. The project aims to shed more light on his celebrated cookbook, “Nuevo arte de cocina,” published in 1745.

The book is titled “Disposiciones del colegio de San Diego, Zaragoza, 1753-1801” and offers an up-close look at the daily life of an 18th-century Franciscan community and the setting in which Friar Raimundo Gómez and Juan Altamiras lived. From today through Friday, events organized by the DPZ will help the public learn more about his work.

The studies and transcription of the manuscript provide a better understanding of Altamiras’ life and the circumstances in which his work was developed. The volume includes a facsimile reproduction of the manuscript.

José Manuel Latorre, the Provincial Council’s delegate for Archives and Libraries, who was born in La Almunia, like the subject of these events, said: “With this publication and these events, we are rescuing the history of some figures from oblivion.”

EVENTS PROGRAM

Both initiatives were presented on October 20 by Mercedes Trébol, vice president of the Fernando el Católico Institution; José Manuel Latorre, the Provincial Council’s delegate for Archives and Libraries; and Alberto Aguilera, PhD in History.
