The Zaragoza restaurant winning over diners with traditional cuisine and a gourmet touch: “For people who enjoy the finer things”

For four years, Miguel and María have led this project, bringing a venue with its own personality to life. At Los Sibaritas, located at 4 Marina Moliner Street, dining becomes a complete experience.

They decided to open the restaurant for a very simple reason: “We preferred working for ourselves rather than working for someone else,” admits Miguel, who is also in charge of the kitchen. That was how the adventure of running their own restaurant began. The venue’s name also has its own story. “After giving it a lot of thought and considering many ideas, we came up with this name, which refers in part to people who enjoy good, refined and luxurious things…,” Miguel explains.

QUALITY INGREDIENTS AND DISHES THAT COMBINE INNOVATION AND TRADITION

“We have always believed in a cuisine that respects the ingredients. What we offer are fairly traditional dishes,” Miguel explains. However, at Los Sibaritas, they aim to give each creation their own touch and perspective. “We do put a small twist on some dishes; we try to give them something different and take a little more care with the presentation,” he adds.

“We wanted to offer cuisine based on quality ingredients. It is not luxury cuisine, but it is designed for people who enjoy the finer things, for food lovers,” Miguel explains, making a nod to the restaurant’s name. The more carefully presented dishes and the small personal touches they add to their creations are precisely some of the elements that set Los Sibaritas apart from other restaurants.

FROM PATATAS BRAVAS TO CHEESECAKE: THE MENU CLASSICS THAT NEVER CHANGE

“Several dishes have become the best known and most requested over the years,” Miguel reveals. Among them are their patatas bravas, a classic of Spanish cuisine that has earned a place among their customers’ favorites, and their roasted aubergine salad.

They also offer more creative, signature creations, such as their mushroom ravioli, made with wonton pastry, truffle sauce and a parmesan cloud. Desserts are another major draw on the menu and have become true essentials. The best known include cheesecake, lemon pie and torrijas.

A CUISINE WITH SOMETHING FOR EVERY TASTE

Miguel describes his offering as a cuisine where “there is room for everyone”. This idea is reflected in a varied menu, where traditional creations such as croquettes sit alongside options including grilled squid, queen scallops and steak tartare.

Looking ahead, Miguel and María are clear that their goal is to continue along the same lines: maintaining the essence of Los Sibaritas, continuing to focus on quality ingredients and continuing to offer approachable, carefully crafted cuisine with its own personality. All without losing what has allowed them to establish a place in Zaragoza’s culinary scene.
